Quick and Easy Salmon Parcels by Sarah Williams, mum of four

Prep time: 10 mins

Cooking time: 20 – 25 mins

1 x pack of Ready to Roll Puff Pastry

350g Boneless Salmon Fillet cut into small cubes

1 x beaten egg

Preheat the oven to 220 degrees.

Lay the pastry flat, place a cube of salmon on the pastry and cut around the salmon leaving a 2 – 3 cm gap all of the way around. Fold the pastry over the salmon to make a sealed parcel. Repeat this with all of the salmon cubes.

Place on the parcels on a baking tray lined with greaseproof paper, brush the pastry with the beaten egg. Cook in the oven for 20 – 25 minutes until golden brown and salmon cooked all of the way through.

Serve with your favourite veggies!
