Spinach, potato, carrot and cheddar mash recipe

This super mash recipe is made from all things good – spinach, potato, carrot and cheddar. Who could ask for more?
MAKES: 4 PORTIONS
350g potatoes, diced
200g carrots, diced
25g Cheddar cheese, grated
2 tbsp milk
1 tsp unsalted butter
- Put the potatoes and carrots into a steamer and steam for 12 to 15 minutes until tender. Alternatively put into a saucepan, cover with boiling water and simmer for 10 to 15 minutes until soft.
- Drain and mash using a potato masher. Add the spinach, Cheddar cheese, milk and butter. Stir over a gentle heat until melted and the spinach has wilted.
